Sur, Cocina de Cordillera is one of Paraguay's most innovative and original restaurants, perched at the top of San Bernardino with panoramic views of the valley, Lake Ypacaraí, and the mountain range. It is a project that celebrates ecological products and the biodiversity of the Cordillera region: Paraguayan cheese from Colonia de Altos, sugarcane honey from Piribebuy, vegetables from Emboscada and the restaurant's own garden, river fish, and beef. Chef José Castro Mendivil is known for creating a Paraguayan version of Peruvian ceviche using surubí (river tiger fish) as the main ingredient. The menu features ceviches and tiraditos with unique regional ingredients, fusing contemporary Peruvian technique with Cordillera terroir. Open Tuesday to Sunday from 21:30.
